I have another blog I love to read, Heavenly Homemakers. She posts a menu plan every week and it is so helpful for me for generating some new ideas. We have a few restrictions in our house (that means... if I make them my husband will not eat them) so I don't and we are both happy. No casseroles, no peas, and limited white sauce dishes. If I feed him cream of ANYTHING soup he might wake up with night terrors over his horrible dinner experience. I don't include too many of these in my menu plans or look at these on other websites, but that is the beauty of the internet, you can pick and choose for your family.
Here is our plan this week:
Monday: Chicken tortilla soup, tortilla chips
Tuesday: Steak, potatoes, salad (birthday party for Dad B)
Wednesday: Quiche, sausage links
Thursday: Chicken Lettuce Wraps, rice, veggies
Friday: Potato Pockets
Saturday: Dinner at neighbors (we have to go any chance we get before our family gets too big and no one invites us over anymore)
Sunday: Roast, carrots, potatoes
The boys and I have the same schedule for breakfast and lunch for each day of the week. It just keeps things simple and then I know what to have in the house and I only need to be creative about dinners.
putting together the menu for this week, would love to hear more about the potato pockets and your chicken tortilla soup. The Chicken Wraps look amazing! Gonna have to try!

DeleteThose are both super easy so I will try to give you a brief explanation here:
Chicken Tortilla
1/2 C. green pepper
1/2 C. onions
1/2 t. cumin
Saute in butter until soft
Add in large soup pan:
3 1/2 c. of chicken broth
1 c. corn
onion and pepper mixture
1 can of salsa
and some cooked chicken
Serve with sour cream, cheese and scoop tortilla chips.
Potato pockets (make these individual, one for you and one for Dustin)
In a piece of tin foil add 1-2 sliced up potatoes
salt
pepper
Cheese (whatever you have)
Then use whatever leftovers you have. Any leftover meat? throw it in there. For sauces I usually do some salsa, sour cream, and hot sauce. Or Italian dressing with a little beer. You could do a red or white sauce in it or whatever you have. Then add some veggies, broccoli, onions, peppers, or whatever you have.
Cook for 45 minutes at 350. That is a very rough version, but I will post a prettier on on my blog later. If you have any questions let me know, My Love! Miss you!
